Abstract:

Taste is a very complex and important sense. With the help of highly sensitive and specific taste receptors, mammals identify the chemical substance, search for food, regulate appetite and make corresponding likes and dislikes or even avoiding behavioral responses. At present, taste signal transduction mechanism is hot and difficult in basic research of stomatology. In the past few years, taste receptors, signal transduction and regulation mechanism had received considerable attention. In this paper, the research progress on type and function of taste cell, taste receptors, singnal transduction and modulation mechanism in the periphery are reviewed.

Key words: taste receptors, signal transduction, modulation
