Dextr anase of or al streptococci: Molecular structur e and function

Abstract: Dextranase is a kind of glucanase which degrades α- 1,6 glucans and thus hydrolyzes water- soluble polysaccharides. Many kinds of bacteria including oral streptococci could synthesize dextranase. The dextranase synthesized by oral streptococci take part in the modification of exopolysaccharides and the adhesion of bacteria. The article reviewed the molecular structure and function of dextranase synthesized by oral streptococci in recent years.
