Molecular structure and regulation mechanism of fructosyltransferase in oral

Abstract: Fructosyltransferase is a kind of enzyme, which catalyzes the synthesis of fructan when sucrose is present at environment. The fructosyltransferase of oral Streptococci acts as one of its important cariogenic proteins. The article reviewed the molecular structure, reaction mechanism, coding gene and regulation mechanism of fructosyltransferase.
